Not sure if this is a big or not. I tried to go back and set my phone number for SMS, but it tells me I can't change my e-mail address. I didn't change ( or touch) the e-mail address portion of the settings screen. Am I just slow today? What am I doing wrong.

Nevermind. The answer was to not put format characters in the field. xxx-xxx-xxxx doesn't work but xxxxxxxxxx does.
