My BOINC client is showing an error that reads:

BOINC is unable to communicate with a project and no default connection is specified. Please connect to the Internet or specify a default connection via the connections tab in the Options dialog off of the advanced menu.

My internet connection is rock solid. When I go to where it tells me to go to fix the problem, it requires settings for dial-up and virtual private networking, neither of which I have.

What can I do to fix this, please?

If your net connection is rock solid then you can ignore this warning. The linux message is actually better worded it says go to the advanced menu and select retry communications.

The message pops up due to failed communication attempts, if your net connection is ok and a few projects are down the message will pop up. I'm not sure of the exact number that have to be down at any one time or the time frame that the fails have to happen in.
